Lion's Mane Carnitas Tacos

These tacos are an easy week-night dinner option. Lion's Mane is a great ingredient to use in vegetarian dishes! The depth of flavor and the meaty texture of the Lion's Mane makes for a delicious pork alternative.


  • 1 Pound of Harmony Mushroom Lion’s Mane
  • 6 corn or flour tortillas
  • 1 tablespoon olive oil
  • 2 fresh limes
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon of Oregano
  • 1 1/2 teaspoon of Cumin
  • 5 cloves of minced garlic
  • Salt and pepper to taste
  • 1 small avocado-diced
  • ½ diced red onion, fresh jalapeño, cotija cheese, and cilantro for toppings


  1. Shred Lion’s Mane by hand to resemble pulled pork. Place in pan on medium/high heat with olive oil, stirring occasionally for 5-7 minutes or until the water is cooked out. Strain or press out excess water.
  2. Add chili powder, oregano, cumin, garlic, salt and pepper to cooked Lion’s Mane. Squeeze the juice of one lime into pan. Reduce heat and stir until combined. 
  3. Warm second pan to low heat, toast tortillas until they are warm. 
  4. Top your warmed tortilla with carnitas and dress with jalapeño, avocado, red onion, cilantro, cotija, and a squeeze of fresh lime and enjoy!
