Oyster Mushroom Spaghetti Bolognese

This recipe takes some time and love, but it is well worth the effort. The texture of the minced oyster mushrooms makes for an excellent minced meat dupe and is sure to impress. Don't forget to finish the rest of the wine with dinner!


  • 1 pound of fresh Harmony Mushroom oyster mushrooms-finely minced
  • 4 slices of bacon-finely minced
  • 2 carrots-finely chopped
  • 2 sticks of celery-finely chopped
  • 4 cloves of garlic-finely chopped
  • 1 tablespoon of olive oil
  • 3 sprigs of fresh rosemary-finely chopped
  • 1 cup of freshly chopped basil
  • 1 teaspoon of oregano
  • 2 bay leaves
  • 2 tablespoons of tomato paste
  • 1 beef bullion cube
  • 2 400-gram tins of plum tomatoes
  • ½ cup of red wine
  • 16 ounces of uncooked spaghetti



1. Add finally chopped bacon to a large pan on medium heat with olive oil. Fry for 10 minutes

2. Reduce heat, and then add the carrots, onions, celery, garlic, and rosemary. Cook for 10 minutes or until vegetables have softened.

3. Increase heat to medium-high; add the minced oyster mushrooms, stirring for 3-5 minutes until mushrooms are cooked.

4. To the same pan, add tinned tomatoes, basil, oregano, bay leaves, tomato paste, beef bullion cube, and red wine. Stir and bring to a boil, then reduce to a simmer and cover with lid. Stir occasionally and simmer for 30 minutes.

5. Cook spaghetti per box instructions, drain the cooked pasta and combine with Bolognese. Add some freshly grated parmesan, and enjoy!
